Staff Training is an integral part of the philosophy of The Wine Guide Educational arm. Motivated, knowledgeable and well-trained staff will add value to your business, while effectively adding to your bottom line profitability, especially in terms of sales and stock control.

The hospitality sector is notoriously time poor, and as a result finding time to adequately train staff can be a challenge. TWG wine courses are specifically designed to fast track practical knowledge about communicating with customers to enhance their dining/wine experience, in a short course format. This ultimately leads to motivated staff who are willing to go the extra distance for both the business and the consumer. This model is based on a win/win philosophy and is a sustainable ideal.

Our method to wine training is a no-nonsense, common sense approach to wine, focusing on the practical application of wine fundamentals. These fundamentals will be taught in the context of service, communication and maintenance of stock to ensure profitability

What Does This Course Offer?


• Offer a single day course that covers 4 separate modules with the aim to introduce and encourage potential wine professionals to learn about communicating the intricacies of the world of wine.

• This is NOT an exhaustive course, but an introduction to help the students understand not only what wine is, but also how to talk about the subject with authority after just 4 modules (8 contact hours)

• The Wine Guide makes learning about wine accessible, and the goal is to empower the students to discuss and communicate the essence of the subject matter.

• The Wine Guide will conduct all training in the venue where the students work; WE BRING THE TRAINING TO YOU.

• Provide materials, wines and suggested reading to continue on the road of discovery. Where applicable wines for training will come from the venue's list.

• Holds an exam at the end of the course to gauge retention of students. A full written report will be forwarded to the venue on the results.

What is Involved?


The course layout involves 8 contact hours and covers the following 2 hour modules;

Module I - Fundamentals of Wine & Communication

Introduction to wine, its history and how it is made
• How to taste wine, what to look for, and how to communicate observations and conclusions
• Wine list induction (either Example copy, or venue's own)
• Communication Skills (Keeping the message simple)
• Introduction to white wine
• Introduction to red wine




Module II - Communicating winemaking, style and regionality (White Wine)

Tasting of 3 Chardonnay from different regions to highlight the effect of regionality (growing conditions/terroir)
• Discuss how winemaking effects what is observed in the glass
• Discuss food & wine matching in the context of these different styles
• Taste examples of light, medium & full-bodied dry white wines
• Explore varietal concepts and differences
• Elaborate on why wines may be blended
• Learn about appropriate service temperature depending on variety, age and situation




Module III - Communicating winemaking, style and regionality (Red Wine)

Tasting of 3 Pinot Noirs from different regions to highlight the effect of regionality (growing conditions/terroir)
• Discuss how winemaking effects what is observed in the glass
• Discuss food & wine matching in the context of these different styles
• Taste examples of light, medium & full-bodied dry white wines
• Explore varietal concepts and differences
• Elaborate on why wines may be blended
• Learn about appropriate service temperature depending on variety, age and situation




Module IV - Sommelier Service Techniques & Practical Skills

Communication and Sales Skills
• Table Service
• Glassware
• Opening Sparkling and Table Wines
• Decanting
• Food & Wine Matching
• Wine list construction and maintenance
• Wine by the glass

We know every venue is different therefore flexibility is the key to our training program. As a result you can choose the whole course or individual modules.

When it comes to wine training, the options are endless so we've developed specialist training modules that can be adapted to a venue's specific need.
